Stuffed Peppers

Introduction

I've been making this for years. I used the leanest ground beef I can find, browned, drained and rinsed in hot water. Sounds weird but you will take off quite a few grams of fat. I've been making this for years. I used the leanest ground beef I can find, browned, drained and rinsed in hot water. Sounds weird but you will take off quite a few grams of fat.
Number of Servings: 12

Ingredients

    1 lb 93% Ground Beef - browned, drained and rinsed w/hot water
    3 boxes Zatarains Spanish Rice
    3 cans Rotelle diced tomatoes and green chiles
    12 large bell peppers
    12 slices 2% sharp American Cheese

Directions

Brown ground beef
Make Zatarains Rice according to directions using Rotelle Tomatoes and green Chiles
Mix ground beef with rice
Cut tops off of bell peppers
Stuff bell peppers with rice mixture
Put any leftover rice on bottom of large cassarole or lasagne pan
cover w/foil, Bake in 350* oven for about an hour
Remove foil
Add Cheese slices
return to oven to melt cheese
Makes 12 servings
