Zucchini Boats

Ingredients

    4 Al Fresco Chicken - Tomato Basil Sausage
    2 Bell peppers - chopped
    1 large onion - chopped
    2 cups fat free chicken broth
    1.5 cups brown rice
    .5 cup bread crumbs
    2 TBSP olive oil

Directions

Sautee onions & peppers in olive oil until just soft
Cook Rice in Chicken Broth
Take sausages out of casings & crumble
Mix, veggies, sausages, rice and bread crumbs together in mixing bowl.

Zucchini:

Cut in half length wise, then cut into about cup size chunks. Scrape out flesh so it looks like a boat.

Fill with veggie, sausage mixture.

Grate parmasean cheese on top.

Cook at 350 until Zucchini is al dente (about 45 minutes.)
