1 orange bell pepper
1 small red onion
5-7 spears asparagus
1 small yellow squash
1/2 small zucchini
salt & pepper
Heat 1-2 tablespoons olive oil in a large skillet & add veggies. Keep stirring over medium heat until al dente. Season with salt & pepper to taste. Finish with a squeeze of lemon.
Makes 6 1 -cup servings.
