Introduction

I love how quick this recipe goes together, I have broccoli, ham and mushroom listed but you can use any cooked vegetable you have leftover in the fridge. Number of Servings: 4

Ingredients


    1 Tbsp Butter
    C Chopped Onion
    1C Broccoli florets
    C Julienne Ham
    1C Sliced Mushrooms
    1- C Skim Milk
    5 Eggs
    1T Flour (or GF equiv. thickening agent)
    Dash Salt & Pepper
    tsp Bottled Red Pepper Sauce
    C Swiss Cheese grated

Directions

Preheat oven to 325F
Lightly grease a quiche dish or 7-8in pie plate

Melt butter over low heat in a medium fry pan. Add onion, broccoli and mushroom, sprinkle with 1/8 tsp salt. Cover and cook 10min over medium heat, stir occasionally. Add ham and cook uncovered 5 min or until all liquid has evaporated. Place cooked ingredients into prepared dish.
In blender combine milk, eggs, flour, tsp salt, pepper and red pepper sauce and blend until smooth, pour over cooked veggies. Add cheese, stirring to distribute evenly..
Bake 45-50 minutes or until firm in the center, let stand 5-10 min.
