Tropical Bread Pudding

Introduction

I hate wasting things, so came up with this recipe to use up bread that would normally go to waste. I hate wasting things, so came up with this recipe to use up bread that would normally go to waste.
Number of Servings: 8

Ingredients

    *Brownberry 12 grain bread, 8 slices

    Banana, fresh, 1 medium (7" to 7-7/8" long) very ripe(remove)

    *Pineapple, canned, 2.25 cup, crushed, whole 20 oz can juice and all(remove)

    Egg, fresh, 2 large (remove)

    Vanilla Extract, 1 tsp (remove)

    *Splenda Brown Sugar Blend, 12 tsp (remove)

    To make lower in fat/calories, substitute egg whites for regular eggs.
    Also, nonfat milk to replace coconut milk.
    I've also thought of adding protein powder, and flaxseed meal to make a healthier version.c

Directions

1) Cut bread slices into cubes and place in a greased 13x9,or larger baking dish.

2) In a bowl put eggs, milk, vanilla, Splenda, and mix together well. Then pour in whole can of pineapple with juice. Stir.

3) Pour liquid over bread cubes in dish. Cover and let sit for at least 2 hours, or overnight.

Optional: before putting in over, pour 2 tablespoons of melted butter over top, also you can lightly sprinkle sugar and cinnamon. (Options not included in calorie count)

Bake in 350 degree oven for 50-60 minutes. Should come out golden brown.

Makes 8 servings at 259 calories each.
