Scrambled Cheese Eggs on Rye Bread

Introduction

Ingredients

    1 slice Fitness rye bread
    sprayed olive oil
    1 egg
    .25 c. egg substitute
    freshly-ground pepper
    2 T. chopped chives
    2 T. grated reduced-fat cheddar

Directions

Lightly toast bread. While it is toasting, spray a heated non-stick fry pan with olive oil. Add egg, egg substitute, chives and pepper. Scramble eggs, separating into two portions in the pan. Divide toasted bread in two and put one portion of eggs on each half. Sprinkle 1 T. cheese on each portion. Broil each portion until cheese melts. If you have a workout planned, eat one portion before and one after.
