Garden Vegetable Pasta with Chicken

Number of Servings: 6

Ingredients

    1 box whole wheat pasta (spirals or penne)
    1 lb boneless skinless chicken breast cut into bite-sized pieces
    1 medium zucchini, chopped
    1 medium red bell pepper, seeded and chopped
    1 cup carrot slices
    1 jar of Ragu light spaghetti sauce

Directions

Cook the pasta as directed.

In a large pan, cook chiken throughly. Stir in zucchini, bell pepper and carrot slices. Cook and stir until vegetables are crisp tender. Stir in spaghetti sauce and heat throughly. Stir in cooked pasta and serve. Can sprinkle parmesan cheese on top if desired.

(This is easily modified to use your favorite vegetables. For a timesaver on a busy night, use a mixture of frozen vegetables that are already pre-chopped)
