Lasagna Roll ups

Introduction

Number of Servings: 12

Ingredients

    Frozen Spinach - 10oz
    Ricotta Cheese, part skim - 15 oz
    Lasagna noodles - 14 oz (about 12 noodles)
    Pamesan Cheese, grated - 1/4 cup
    Egg substitute (egg beaters) - 1/4 cup
    Mozzarella Cheese, part skim - 7oz
    Ragu Light, Tomato & Basil - 6 cups

Directions

1. Cook 14 oz of Lasagna noodles according to package directions
2. Preheat oven to 350
3. Cook Frozen spinach according to package directions
4. Combine spinach, Ricotta cheese, 6 oz of mozzarella cheese, parmesan cheese & egg substitute.
5. Cut cooked lasagna noodles in half, spoon cheese and spinach mixture onto a half noodle and roll it up - place it in casserole dish - repeat with all noodles.
6. Spoon pasta sauce over the roll ups and sprinkle remaining cheese on top.
7. Bake for 35-40 mins.

1 serving = 2 Rolls
Recipe makes 12 servings

Note - I have a family of 3 and 12 servings is way too much left overs - I cooked 12 rolls and froze the other 12.
