Introduction

This is a great recipe I got from Hungry Girl in one of their books. However, I don't make the eggplant parm, I just use the eggplant finished product for sandwiches or snacking This is a great recipe I got from Hungry Girl in one of their books. Number of Servings: 4

Ingredients

    ground the fiber one cereal
    slice the eggplant so that each is round
    put egg beater in bowl and grounded fiber 1 in different bowl
    dip eggplant in egg than fiber 1. place each slice on baking sheet. when finished, bake for 30 minutes. If you want, you can turn them over. For additional flavor, put garlic powder, salt and pepper into crumbs.
    you can also used the finished pieces for eggplant parm.
