Ingredients

    carrots
    onion
    yellow squash
    zucchini
    eggplant
    sweet potato

Directions

Preheat oven to 400. Cut all vegetables into chunks, toss wit olive oil and spread on baking sheet. Roast for 50 minutes, turning w/spatula once during cooking.
