Banana Oatmeal Bread

Ingredients

    .25 cup unsweetened applesauce
    .5 cup brown sugar
    .25 cup canola oil
    2 large eggs
    1.5 cup mashed banana
    1 cup steel cut oats (can use regular but these have more texture and fiber)
    .5 cup skim milk
    2 cups whole wheat flour
    1 tbsp baking powder
    .5 tsp baking soda
    .5 tsp salt
    .5 tsp cinnamon

Directions

Combine first 4 ingredients, beat with a mixer at medium speed. Combine bananas, oats, and milk in a separate bowl. Add to sugar mixture, beating well. Combine flour, powder, soda, salt, and cinnamon with a whisk. Add to sugar mixture until just combined. Bake 350 degrees for 1 hr and 10 minutes. Cool 10 min in pan, then remove to cool completely on a wire rack.
