Sweet Corn, Fresh, 2 ear, large (about 2 cups)
Green Peppers (bell peppers), 3 cup, chopped
Roma Tomato, 6 servings, chopped
*Extra Light Olive Oil, 1 tbsp
Onions, raw, 1 large chopped
Cilantro, dried, 1/2 tablespoon
Thyme, ground, 1/2 teaspoon
Vegetable Broth, 1 cup
Pimentos, 1 tbsp
Heat a large pot or saucepan with vegetable broth until comes to a boil and reduce to medium heat. Add all ingredients and reduce to medium low heat. Let simmer for about 30 minutes. Use corn starch to thicken if desired.
