Tofu, veggie sauce for rice

Introduction

Very thick- stew-like. Better the next day! Very thick- stew-like. Better the next day!

Ingredients

    Tofu -1 block extra firm, cut into cubes
    Broccoli 1 head or more, chopped
    Yellow Onion- 1 medium, chopped
    Pasilla pepper-1, chopped
    Red pepper-1, chopped
    Cherry tomatoes (or other sweet tomatoes) 1 cup
    Corn Salsa-4 Tbs
    Tomato paste-1 can (6 oz)
    Red wine-1/2 cup
    Garlic 2 cloves
    Olive oil 1 Tbsn
    oregano
    salt, pepper
    water

Directions

Saute onion and garlic in olive oil until soft- better to add garlic when onion is almost soft. Add tofu, saute for a few minutes.
Add peppers, and red wine, simmer until peppers begin to soften.
Add tomato paste and enough water to steam broccoli (you can add more as cooking continues)
Add broccoli, corn salsa, tomatoes and herbs.
Simmer covered for 30-40 mins. It will be thick.
Serve over brown rice (nor included in nutrition info)
