Ingredients

    1/3 C. shelled edamame, cooked
    1/4 C. firm tofu, diced
    1/4 tsp. minced fresh ginger
    1 tsp safflower or olive oil
    salt to taste

Directions

combine all ingredients in a bowl and toss thoroughly. Refrigerate and allow to sit for at least 2 - 4 hours so tastes combine.
