Introduction

Ultimate comfort food on a cold day. Any other meat can be used to replace the turkey. This is a good dish to batch cook as it tastes even better the next day! Ultimate comfort food on a cold day. Number of Servings: 4

Ingredients

    300g diced turkey breast, without skin
    1 potato, peeled and diced
    1/4 cup of lentils
    1/4 cup of peeled and chopped carrot
    1/4 cup of broccoli
    6 small mushrooms, chopped
    1/2 cup of pinto beans (other types can be substituted)
    1 pepper, sliced into strips
    2 cloves of garlic, crushed and finely chopped
    1onion, finely sliced
    3 cups of water

Directions

- Prepare Veg as per instructed in ingredients list

-Place onion and garlic in large saucepan over a medium heat. Stir until onion has softened

-Add the diced turkey and cook until the meat has sealed.

-Add the remainder of the veg and the lentils and the water. Add seasonings as required. I often use a mixture of herbs such as parsley, basil. rosemary etc.

-Bring to the boil, them reduce to a simmer and leave to cook for approximately 30 minutes, stirring occasionally. Once the veg and meat is cooked, serve.

MAKES 4 Servings of approximately 1.5 cups per serving. This is really filling served with crusty bread. If preferred you can leave out the potato and serve with a side dish of mashed potato.
