Slow Cooker Pork Tacos

Ingredients

1 Boneless pork roast
1 1/2 cups salsa verde
1 medium red bell pepper, chopped
1 medium onion, chopped
2 Tbs. lime juice
3 garlic cloved, minced
1 tsp. ground cumin
1/2 tsp salt
1/4 tsp pepper
10 whole wheat tortilla
Any additional toppings...
lettuce, sour cream, cheese, taco sauce, onion, raw peppers, etc.
Directions
Combine all ingredients, except the tortilla shells, in a crock pot. Cover and cook on high for 4-5 hours or until meat is very tender. Shred pork with 2 forks. Warm tortilla shells in oven or microwave to have them warm and pliable. Put approx. a 1/2 cup of the pork mixture in the center of each tortilla shell. Serve with any toppings you wish.
NOTE: If you have picky eaters in your house as I do, I like to remove the roast to shred, and place the juices, with the peppers and onions in the food processor to puree it before I add the pork back in. The kids are none the wiser! :) And they love it!
