4 slices of bacon cut into 1 inch pieces
1/4 cup white vinegar
1 tablespoon sugar
1 teaspoon ground mustard
4 cups bite-size pieces of spinach leaves (or baby spinach)
1 cup sliced fresh mushrooms
1 cup chopped red onion
1 cup crumbled feta cheese
1/2 lb cooked and deveined medium shrimp
Toss spinach, feta cheese, mushrooms and onions in a large bowl.
Drizzle with dressing and serve immediately.
