Slow Cooker Taco Soup

Introduction

A Mexican Flavorful Chili A Mexican Flavorful Chili
Number of Servings: 10

Ingredients

    Packet of Hidden Valley Ranch Dressing Mix
    Packet of Taco Seasoning Mix
    One Medium Onion
    One pound of ground turkey

    The following Items, do not drain:
    One can of Green Giant Shoepeg Corn
    One can of Santa Fe Beans
    One can of Pinto Beans
    One can of Italian Stewed tomatoes (cut up if desired)
    One can of Mexican Stewed tomatoes (cut up if desired)

Directions

Brown together the ground turkey, medium onion chopped, packet of hidden valley ranch dressing mix, and packet of Taco Seasoning mix. When done, there should be very little grease. (Some leaner forms of ground turkey don't crumble as easily and would need to be broken up more during the browning process.)

Take the browned turkey mixture and place into a crock pot. Add remaining cans (DO NOT DRAIN - THIS IS THE JUICE OF THE SOUP). Coon in crockpot (slowcooker) for 8 -9 hours on low (depends on your slowcooker) or 5 hours on high.

*Note: You can also cook on stove top for about an hour or so, but the flavor really tastes better in a slow cooker.

    Excellent! One of my favorite recipes. I had a similar recipe which has Black Beans instead of Santa Fe; plus, add a can of Rotel. Great as a soup or taco stuffing. Weight watchers is 2 pts per 1 cup serving. - 11/13/07

    This is an excellent recipe that my family has been making for years. I use pinto and kidney beans, and instead of corn, I use white hominy. This gives it the taco shell taste without the chips or shells. I also use diced or crushed tomatoes and add diced jalapeno because we like ours spicy. - 6/3/08

    Super Easy. I made a few changes: I used low-Sodium seasonings. I also went with the low-Sodium organic version of the beans and veggies. I am not sure how this effects the recipe - other than reducing the sodium. - 3/6/09

    This could be made healthier buy draining and rinsing the veggies, then using low sodium broth or stock for the liquids. I also left out the ranch and it was still good. - 12/14/08

    i used morningstar farms ground beef, only half the packet of taco seasoing like others and also black beans instead of sante fe. my picky ten year old i even got to eat it, as nachos...with cheese and sour cream...but still, he ate real beans! lol...my boyfriend looooved it too! - 1/12/08

    I LOVE this recipe! I have been making this for the past 6 years here at home and the whole family absolutely loves it. We dont call it taco soup though, we call it chili! We instead, drain the items off and add a can of low sodium tom. sauce and black beans! TEN THUMBS UP! - 10/2/08

    I have made a version of this for years, but your recipe is my new standard. It was soooo good. I hadded a few tablespoons of light sour cream and a sprinkle of cheese and it was amazing. Such an easy meal and so warm and comforting on a cold night. - 12/3/07

    I found this recipe to be quite strongly flavoured - it could be because I let it cook longer. I added another can of diced tomatoes and it was great. - 10/14/07

    This soup is excellent!!! I used low sodium canned stuff when possible, couldn't find Santa Fe Beans, used Texas Beans instead, added a small can of chicken broth, low sodium. I will make this A LOT! - 11/9/07

    Great soup! Like some of the others I used only 1/2 the pkt of taco seasoning, and added a can of rotel tomatoes to spice it up a bit. Delicious! - 10/16/07

    We love this soup! To lower the salt content I drained the beans everything that could be drained to lower the salt and added beef stock to replace the liquid. Yummy! I make this as often as I can get away with it!!! - 10/11/07

    i make something like this but I use two cans of everything with 1 lb meat, and toppings to choose from are sr cream, salsa, and cheese. I like cheese and salsa, the kids and hubby like the sour cream. Its our family favorite, and two cans of each makes enough soup for everyone - 9/14/07

  • Great!! We substituted light Red Kidney beans as I couldn't find Santa Fe beans at our WalMart. Very hot when done, so let your bowl cool down before eating! We had to make our own taco seasoning as we'd used up our packet. Thanks for a great tasting dinner- and EASY! - 2/8/10

  • Love it! Rinse beans to decrease sodium and add beef broth or consomme for liquid. I use black beans and add green chili pieces. Even the 4 y/o will eat it. Top with sour cream and cheese for a treat.

  • This was a really big hit. I was cooking for a vegetarian though, so I swapped out the meat with two cans of black beans. I also chopped up a green bell pepper and tossed that in there too. Put a little low fat sour cream and cheese on top of each serving. Delicious! - 10/10/09

  • I've tried a million (okay, exaggerating) different recipes like this, and haven't really liked any. I LOVED this! :) Thank you!
