Basic banana muffins Basic banana muffins
Number of Servings: 12


    1 cup mashed banana (about 3 medium bananas)
    3/4 cup splenda
    1/3 cup unsweetened applesauce
    3 tablespoons canola oil
    1/4 cup Egg Beater egg substitute
    3/4 cup all purpose flour
    3/4 cup whole wheat flour
    1 -1/2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/4 cup chopped walnuts


In a large bowl, beat the bananas, splenda,applesauce, oil and egg beater until well blended. Combine the flours, oats and baking powder; gradually beat into banana mixture. Stir in walnuts.

Coat muffin tray with cooking spray or use paper liners, fill 1/2 full with batter. Bake at 350 for 12-14 minutes or until a toothpick inserted in center of muffin comes out clean.
