Heidi's Black Bean Soup

Introduction

A cheap and easy black bean soup. Serve over brown rice with a dollup of reduced fat sour cream. Yum!! A cheap and easy black bean soup. Serve over brown rice with a dollup of reduced fat sour cream. Yum!!
Number of Servings: 8

Ingredients

    3 16 oz cans Black Beans
    1 16 oz can tomato sauce
    1 16 oz can Beef Broth
    1 cup water
    3 large celery stalks
    3-4 cloves of garlic
    1-2 tbsp Sriracha hot sauce
    2 tbsp lime juice
    salt/pepper to taste

Directions

Toss it all in the food processor and blend until smooth. Put it on the stove to simmer for about 30 minutes, stir frequently. Garlic/hot sauce can be more or less depending on how garlicy/spicy you like your soup.
I pour it over a cup of brown rice and add a little sour cream.

This makes approx 8 one cup servings.
