Body Back Veggie Omelet

Ingredients

    1/4 cup mushrooms, chopped
    1/4 cup bell peppers, sliced
    1/4 cup spinach, chopped
    1/2 cup egg whites
    1 Tbsp fat free feta
    salt and pepper to taste

Directions

Spray nonstick pan with non-fat cooking spray and heat on a medium setting. Stir fry mushrooms and peppers until soft and lightly browned. Add spinach to the mixture. Add egg whites and let atart to set. Keep moving sides of mixture in to let runny egg move to side. Sprinkle with non-fat feta. fold over when eggs are set but still moist. continue cooking until fully set.
