Sweetpotato Spinach Curry

Introduction

Number of Servings: 4

Ingredients

    1 sweet potato, peeled & cubed
    1 10oz bag pre-washed baby spinach
    1 tomato
    1 onion
    1-2 cloves garlic
    1-2 Tbsp curry powder
    1 Tbsp maple syrup (or brown sugar)
    1 Tbsp olive oil

Directions

Makes 4 servings, about 1/2 cup each.

Prep all the ingredients first, because it goes together very quickly once you start to saute.

Peel & chop the sweetpotato. Microwave it in a covered microwave-safe container for 4 minutes. Keep covered & set aside.

If the baby spinach is in a microwave bag, follow instructions on the bag. Otherwise, put in a covered microwave-safe container and microwave about 2 minutes.

Chop the tomato and set aside.

Chop the onion. Saute in olive oil until the onion begins to brown. Add garlic, chopped tomato, curry powder, and maple syrup. Cook for 1-2 minutes, stirring. Add spinach & sweet potatoes, stir until heated through. Adjust seasonings to taste.

Serve!

Note: I have also used frozen spinach or frozen kale instead of the fresh baby spinach.
