Crockpot Minestrone

My mom's favorite recipe My mom's favorite recipe
Number of Servings: 10

Ingredients

    2 cans chicken broth
    4 cups water
    2 cans diced tomatoes
    1 can tomato sauce
    1 can kidney beans
    1 cup diced onion
    1 cup diced celery
    1 cup frozen peas & carrots
    1 cup zucchini
    1 cup summer squash
    1 cup snapped green beans
    2 tsp parsley
    1 tsp oregano
    1/2 tsp basil
    1 bay leaf
    1 tsp pepper
    2 cloves garlic
    1 tbsp olive oil
    2 1/2 cups favorite pasta (I used tri-color rotini)

Directions

Pour chicken broth, water, diced tomatoes, tomato sauce, and kidney beans into crockpot. Stir in vegetables then add spices.

Cover and turn heat to high or low depending on how long you wish to cook. On high for 3 to 4 hours, low for 5 or more hours.

Serves 10 (approx)
