Lighter Baked Potato Soup

Number of Servings: 10

Ingredients

    1 lb Butterball Turkey bacon
    1 cup chopped onion
    2/3 cup all purpose flour
    6 cups swansons all natural chicken broth
    5 lg baked potatoes peeled and sliced
    2 cups fat free 1/2 & 1/2
    2 tsp minced garlic
    1 1/2 dried basil
    1 tsp salt
    1 tsp pepper
    1 3/4 Kraft 2% Shredded cheddar cheese
    1 cup reduced fat sour cream

Directions

Bake potatoes in oven for about an hour at 350. Once cool enough to handle peel potatoes and cut up into bite size pieces. Cook bacon in soup pot. After bacon is cooked remove bacon from the pot and cook the onion in the bacon grease until onion turns white. Add flour, make sure the fire/heat is real low. Stir well, cook for 1 min stirring constantly. Add chicken broth slowly, stir well. Cook over med heat til thick. Add potatoes, 1/2 &1/2, garlic, basil, salt and pepper. Simmer 10 minutes over low heat. Add 1/2 the cheese cook til cheese melts. Serve with cheese, bacon bits and sour cream on top of soup in bowl.

Original recipe calls for 1/2 tsp hot sauce to be added with other spices, I leave it out because I am not a big fan of it.

I think it is about 10 servings, not postive it could be more.
