1 64oz can tomato juice
1 large green bell pepper
1 large peeled cucumber
1 large chopped yellow onion
1 cloves garlic/diced
1 cup white vinegar
salt and pepper to taste
add onion, bell pepper, cucumber, garlic, and white vinegar, salt and pepper.
Puree till you can see it all blended.
Remove half into large bowl and then add remaining tomato juice to blender and blend with other 1/2 that's left in blender.
Pour all into large bowl and stir together.
Absolutely delicious. Serve with pita bread and low fat creamed cheese.
