Chicken and pasta

Number of Servings: 1

Ingredients

    1 tsp. olive oil
    1 oz. whole wheat elbow macaroni (1/4 c. uncooked)
    3 oz. cooked chicken breast
    1 T. chopped onion
    1 stalk celery, diced
    1/4 c. frozen spinach
    5 baby carrots, quartered lengthwise
    1/4 c. diced green pepper
    1 oz. 2% velveeta
    1/4 tsp. chicken base(boullion granules)
    1/4 c. skim milk
    2 tsp cornstarch
    1/4 c. water


Directions

Cook macaroni.
While the macaroni is cooking, saute the vegetables in olive oil until desired texture.
Drain the noodles. Add the cheese, milk and chicken base. Cook over low heat until cheese is melted.
Combine water and cornstarch and add to noodle mixture. Allow sauce to thicken and add to vegetables. Enjoy!
