California Bow Tie Chicken Pasta

Introduction

Farfalle pasta with carrot, broccoli and cauliflower in a creamy sauce. Substitutions may be made such as whole wheat pasta, fat free sour cream and skipping the cheese in order to make this healthier. You can use any type of shaped pasta, but farfalle is best. Ingredients

    1 box regular or whole wheat bow tie (farfalle) pasta
    1 1/2 cans Campbell's 98% Fat Free Cream of Chicken Condensed Soup (no water or milk added)
    1 bag frozen California Vegetables
    1-2 cloves garlic, minced or pressed
    4 oz monterey jack cheese, grated
    1/4 cup reduced fat or fat free sour cream

Directions

Boil pasta until tender enough for your preference, then drain well. While you have the water going, put the condensed soup in a saucepan on medium. Mince or press the garlic and add it to the soup. Add the frozen vegetables. Bring to a simmer, stirring occasionally. Lower heat if necessary, keeping the sauce at a simmer. Sauce is done when the garlic and vegetables are cooked. Add hot sauce to hot pasta and mix. Sprinkle grated cheese over the pasta and cover until cheese is melted, then serve. Makes 8 1-cup servings.
