Butternut Squash Kugel

Number of Servings: 12

Ingredients

    3 eggs
    1.5 cups vanilla flavoured soy or rice milk
    1/3 cup sugar
    1/2 cup flour
    1/2 tsp cinnamon
    24 ounces frozen butternut squash, defrosted and mashed
    Baking spray

Directions

1. Preheat oven to 350F.
2. Crack eggs and place in mixing bowl. Beat with a whisk until pale yellow and fluffy.
3. Whisk in soy milk and sugar. Slowly add the flour, continue whisking the batter as you add the flour so that there are no lumps. Add cinnamon.
4. Slowly add the squash. Mix the squash into the batter until the entire mixture is very smooth.
5. Spray the inside of the baking dish with baking spray. Use spatula to scrap the batter from the bowl into the dish. Smooth down top of the batter with the spatula.
6. Bake in the oven for 1 hour.

* Can also be made using small ramekins - if using ramekins, only bake for 35-45 minutes.

Makes 12 servings.
