this is a very hearty vegetable soup that is low in calories. You can use low sodium bouillon if you are watching you sodium intake! Number of Servings: 20

Ingredients

    1 cabbage head
    green giant fresh baby carrots 16 oz.
    green beans frozen, 3 cups
    knorr vegetarian vegetable bouillon cube - 3
    1 tsp. salt
    7 tbsp. basil
    7 tbsp. oregano
    zucchini, 2.5 cups sliced
    onion, raw, 1 cup chopped
    tomato paste, 1 6oz. can
    water, 20 cups or 5 quarts

Directions

Cut up cabbage, onion and zucchini. Add to a 5 - 6 quart stock pot. To this add remaining ingredients. Stir until tomato paste is dissolved. Cook for about 45 to 60 minutes if you like a crisp tender soup or 90 if you like it softer. It is a great meal or a wonderful low calorie snack. Enjoy.
