IntroductionA yummy - totally non-spicy - Mexican inspired Dip. A yummy - totally non-spicy - Mexican inspired Dip.
1 can black beans, rinsed
1 can white shoepeg corn, rinsed
2 roma tomatoes, chopped
1/2 small onion, chopped
1 small green bell pepper, chopped
2 Tablespoons cilantro, chopped
1 pkg. Good Seasonings dry Italian dressing mix
1/4 cup white vinegar
1/4 cup water, plus 3 Tablespoons
1/4 cup extra virgin olive oil
Toss all other ingredients together and pour prepared dressing mix over it - toss again.
Chill 2 hours or more.
Serve with baked tortilla chips or pita chips.
Makes 15 servings or 1/3 cup each.
