Number of Servings: 6

Ingredients

    1 C Long Grain White or Brown Rice
    1 28oz can diced tomatoes
    1/2 C chopped Green Pepper
    1/2 C chopped Onion
    1 Tbsp Butter
    Water
    Black pepper

Directions

Makes 6 (1 Cup) Servings

In a large microwavable dish with cover melt butter on high power for 30 seconds.

Add green pepper and onion to butter, microwave on high power for 90 seconds.

Drain juice from tomatoes into a measuring cup, add water to equal 2 cups (2 1/2 cups if using brown rice).

Add rice, tomatoes and liquid to dish and cover. Microwave on high power for approximately 25 minutes (approximately 35 minutes for brown rice); or until all liquid is absorbed.

Fluff with a fork and serve. Season with fresh ground black pepper if desired.

Reheats well if you would like to take some leftovers to work for lunch, and is also tasty served as a cold rice salad.

The brown rice makes the dish more filling and also gives a fiber boost.
