Ingredients

    2Tbs olive oil
    6 chicken thighs no skin
    1 med,red onion diced
    10 garlic cloves
    4 red bell peppers seeded and diced
    8 jalopeno or cayenne peppers
    1 Lb.crimini mushrooms trimmed and halved
    2 C.water
    1 bunch fresh basil leaves only and chopped
    1/4 cup parsley finely chopped


Directions

serves 6
In a small pan :mix the chicken broth cube/powder
with 1 cup water. let it rest.
In large heavy pan heat oil add chicken and brown,remove chicken and add the onion , garlic ,bell peppers 4 of the hot peppers and the mushrooms saute' until golden brown
apx.10 min.add the chicken broth and 2nd cup of water to the vegetablesbring to a boil add the chicken and cook until done. 20 -25 min. add more water if needed.
Transfer chicken to serving plates and stir in basil and parsley into the sauce,spoon over chicken,serve with the 4 raw hot peppers.
