Ruby Red Borscht

Introduction

Low fat, low sodium hearty soup. Low fat, low sodium hearty soup.
Number of Servings: 8

Ingredients

    16 oz. (14 oz. cooked weight) lean beef, all visible fat removed
    2 c. red wine
    1 T. chopped garlic
    1 envelope onion soup mix
    2 14-oz. cans no-salt-added diced tomatoes
    4 c. fresh beets, chopped
    3 c. beet tops, chopped
    1.5 c. chopped onion
    3 T. white vinegar

Directions

Put beef, wine, onion soup mix and garlic in a slow cooker and simmer until cookeed, approximately 3 hours. Remove meat and refrigerate the broth. Take off the hardened fat. Add the beef back to the broth, plus the rest of the ingredients and simmer another 3 hours until vegetables are cooked. Makes 8 two-cup servings.
