Black Bean and Corn Salsa

Introduction

This is good as a salsa or in a dish as a salad. This is good as a salsa or in a dish as a salad.
Number of Servings: 4

Ingredients

    1 can (14-1/2 oz. can) Black Beans, drained and rinsed
    1 Cup frozen corn, thawed
    1 large Tomato, chopped
    1/4 - 1/2 cup Green pepper, chopped
    1/4 cup Green Onions, chopped
    2 Tbsp. Cilantro, fresh, chopped
    2 Tbsp. Lemon juice
    1 Tbsp. Olive Oil
    1 tsp. Chili Powder
    1/4 tsp. Salt, if needed (I don't use this)


Directions

Just stir this all together.

Makes 4, approx. 1-cup servings.

I sometimes add a little prepared salsa or low sodium tomato or V8 juice, if I want it saucier.

I use dried cilantro rather than fresh. Just use less.
