Egg Custard Beef Soup

Introduction

Ingredients

    2 ounces ground beef, lean
    3 tablespoons green onion
    1 clove garlic, minced
    1/2 tablespoon sesame oil
    2 eggs, large
    1 1/4 cup beef broth
    1 dash of salt and pepper, optional

Directions

Mix beef, green onion, garlic, and sesame oil in a small bowl I (I use a 2cup measuring cup). Divide the mixture between two microwave safe serving bowls.

In another bowl (I use the same 2 cup measuring cup, but rinsed) whisk the eggs beef broth, salt and pepper. Pour equal portions over each bowl and stir to break up ground beef with whisk.

Place both bowls in the microwave. Microwave on high for 3 minutes, check consistency, microwave another 3 minutes.

If the eggs are not set continue to microwave in 1 minutes increments checking after each round for consistency.
