Banana Bread Breakfast

Ingredients

1 medium Banana
1/2 cup Almond Milk
1 tsp Vanilla extract
1 packet Stevia
2 cups Cooked Quinoa
1/4 tsp Salt
1 oz chopped walnut halves
Directions
Serving Size: 1 Cup (makes 4ish servings)
Cook the quinoa according to the instructions on the package. (I prefer the red quino as it has more fiber.) Aprox 20 minutes to cook. Keep the cooked quinoa in the fridge to save time in the morning.
Melt the banana in the microwave. Cook it for aprox 2 minutes and then mash it up the rest of the way.
in a bowl mix cooked quinoa, salt, stevia & vanilla extract. heat in the microwave aprox 2 minutes.
Add the mashed banana and stir well. Add enough Almond milk to smooth out the texture.
Garnish with a sprinkle of chopped walnuts.
Can be served either warm or cold.
