Ingredients

small chunks Grilled chicken (1 breast)
small plate full of restaurant style tortilla chips
guacamole (.5 cups)
pico de gallo (1 cup)
Monterrey jack cheese (1.5 cups shredded)
Mexican rice (2 cups)
black beans ( 0.5 can)
non fat sour cream (0.5 cup)
Salsa (the more the better, try a salsa verde, roja, etc)
Barbecue sauce (2tbsp)
Directions
Ingredient proportions should be altered to taste. (A good appetizer or party plate to share). Makes 3-4 servings
Season chicken with a bbq rub (or bbq sauce) and grill at 350 until cooked (approx 10-15 minutes) then chop into small pieces)
Cook black beans and mexican rice
Meanwhile, spread chips on plate (or small platter)
cover chips with cheese and microwave for a minute
Spread rice across the top of the chips
Repeat step with beans and then chicken
sprinkle more cheese over the top
add sour cream and then guacamole
add salsas and barbecue sauce (lightly drizzle)
finish off with pico de gallo and topping of lettuce
