Ingredients

1.5 cup all purpose flour
3 tbsp cocoa powder
1/2 cup granulated sugar
dash of salt
1 tsp ground cinnamon
4 tbsp Earth Balance Buttery Sticks (vegan)
1/4 cup egg substitute
3/4 tsp vanilla extract
Directions
Preheat oven to 400 degrees F. Cover a baking sheet with parchment paper, or lightly spray with nonstick spray and dust with flour.
Combine dry ingredients in a bowl and set aside. In a stand mixer, cream the Earth Balance. Slowly add sugar, followed by egg substitute and vanilla.
Slowly add dry ingredients and mix until combined. You may need to use your hands or a spatula, as the batter will be very thick.
Using a tablespoon measure, spoon dough into your hand and roll into a ball. For each cookie, flatten with fork in a cross-hatch form.
Bake at 400 degrees F for 10-15 minutes or until golden on the bottoms. Cool on wire rack.
Makes 24 cookies.
