Spanikopita Casserole

Introduction

This is a quick and easy way to get your "Greek" on without all the fat of buttered phyllo. I used dry herbs, but I imagine the flavor would be even better with fresh herbs. This is a quick and easy way to get your "Greek" on without all the fat of buttered phyllo. I used dry herbs, but I imagine the flavor would be even better with fresh herbs.

Ingredients

    Cooking spray

    1 cup minced white onion (medium sized onion)

    3/4 cup minced green onions

    3 garlic cloves, minced

    1 bag of chopped and de-stemmed spinach

    1Tbsp of parsley

    2 Tbsp Lemon Juice

    2 tablespoons mint

    1 cup (4 ounces) crumbled feta cheese (reduced fat)

    1/2 teaspoon salt

    1/4 teaspoon black pepper

    3 large egg whites

    9 sheets frozen phyllo dough, thawed

Directions

Preheat oven to 350°.

Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add white onion; sauté 7 minutes or until golden. Add green onions and garlic, and sauté 1 minute. Stir in spinach; cook 2 minutes or until spinach wilts. Stir in parsley and mint, and cook 1 minute.

Place spinach and onion mixture in a large bowl; cool slightly. Stir in cheese, salt, pepper, lemon juice and egg whites.

Spray 8x8 baking dish with cooking spray. Layer three sheets of phyllo dough into pan spraying cooking spray between layers (your dough will stick out the ends and go up the sides of you pan a bit). Place half of the spinach mixture on top of phyllo. Repeat with three more sheets of phyllo, spraying with cooking spray, then place other half of spinach mixture. Fold phyllo edges into center, then add the final three phyllo sheets on top, spraying in between and the top sheet.

Bake at 350° for 40 minutes or until golden. Makes 4 servings.
