Ingredients

4 cups chicken broth
1 medium butternut squash (or 8 cups chopped)
1 med onion
1 tbsp Smart Balance
salt and pepper to taste
Directions
Chop onion and saute in soup pot with 1 tbsp Smart Balance till soft - add four cups broth and bring to a simmer - add squash and simmer till soft and easily pierced with a fork (alternatively cut squash in half and place both halves face down on a baking sheet with a little bit of water - bake till soft and skin comes off easily - chop into smaller pieces and add to broth) - transfer soup to a blender and blend till chunks are gone - transfer back to pot and add salt and pepper to taste, simmering for a few minutes - serve and enjoy!
