Chicken and Broccoli Casserole

Ingredients

    8 chicken tenderloins
    8 cups broccoli florets
    1 can cream of chicken soup
    1/2 cup lite mayo
    1/2 cup of 1% milk
    1 tsp. lemon juice
    1 tsp. curry powder
    1 cup shredded cheddar cheese

Directions

Pre-cook chicken in boiling water until no longer pink. Place frozen broccoli in strainer and run water over to defrost slightly. Mix soup, mayo, lemon juice, milk and curry powder to make a sauce. Place broccoli on bottom of casserole dish, then chicken, sauce and top with cheese. Bake at 350 for 30 -40 minutes. Serve over rice. Rice not included in calorie count.
