Salmon Burgers
Introduction
(Borrowed from Denise Austin) Serve hot or cold. (Borrowed from Denise Austin) Serve hot or cold.Number of Servings: 2
Ingredients

2 salmon fillets (4 oz. each) cooked and flaked
1/4 cup crushed whole grain crackers
2 tbsp chopped fresh dill
2 scallions, chopped
1 large egg white
2 drops of hot pepper sauce
pinch of salt
2 tsp olive or canola oil
lemon wedges
salt and pepper to taste
Directions
In a large bowl, mix the salmon, crackers, dill, scallions, egg white, hot sauce, and salt. Form into two cakes. In a large nonstick silllet, warm the oil over medium heat. Add the cakes and cook for 4 minutes or until browned. Turn and cook for 4 minutes. Serve with lemon wedges. (Serve with herb sauce of sour cream and fresh herbs if desired. These are not in the nutrient calculation, however.)
