Mushroom-Stuffed Chicken

Introduction

Adapted this recipe from Cooking Light. The original recipe called for 3/4 tsp. of salt and 1/4 tsp of thyme...didn't have thyme; eliminating as much salt in our diets as possible. Also suggested dredging chicken in flour before the bread crumbs. I thought it would be easier to skip that step.

Probably needed some salt. I thought it was kind of bland.

Ingredients

    *Bread Crumbs PANKO Kikkoman 1/2 cup=1serving, 1.5 serving (remove)
    Mushrooms, fresh, 1.5 cup, pieces or slices (remove)
    Garlic, 3 clove (remove)
    *Kraft Mozzarella Finely shredded Part Skim cheese, 1 cup (remove)
    Pepper, black, 1 tsp (remove)
    Chicken Breast, no skin, 40 ounces (remove)
    Egg, fresh, 2 large (remove)
    *Canola Oil, 3 tbsp (remove)

Directions

1. Preheat oven to 350°.

2. Place panko in shallow dish

3. Heat a large ovenproof skillet over medium-high heat. Coat pan with cooking spray. Add mushrooms; sauté 5 minutes. Stir in garlic. Cool mixture 10 minutes; stir in cheese and 1/4 teaspoon pepper.

4. Cut a slit through thickest portion of each breast half to form a pocket. Stuff each with 1/4 cup mushroom mixture. Sprinkle chicken with remaining 1/4 teaspoon pepper. Place flour in a shallow dish. Place eggs in a shallow dish. Dip in eggs; dredge in breadcrumbs.

5. Heat oil in skillet over medium-high heat. Add chicken; cook 2 minutes on each side or until browned. Place pan in oven. Bake at 350° for 20 minutes or until a thermometer registers 165°.
