Sweet Pickle Relish

Ingredients

    6-7 - Large Cucumbers (seeds removed)
    1 - Green Bell Pepper
    1 - Yellow Bell Pepper
    1 - Orange Bell Pepper
    1 - Red Bell Pepper
    1 1/2 - Large Onion
    1/3 T - Alum
    1/2 cup - Apple Cider Vinegar
    4 cup - water

    ----------------------------------------------------

    1 cup - Apple Cider Vinegar
    3 cups - water
    1 pound - sugar
    1/3 T - Mustard Seed
    1/3 T - Celery Seed
    1/3 T - Salt

Directions

Combine cucumbers, peppers and onion in a food processor and process. Add remaining ingredients above the line and cook slow for 2 hours. Then drain liquid.

Add all ingredients below the line. Bring to a boil. Add to pint jars and process in a water bath canner for 15 minutes.

Makes 7 pints = 672 Teaspooons or 224 Tablespoons
