Fast, fresh breakfast that will stick with you all morning. This Fluffy, cheese frittata packs a punch and tastes great. To lower the fat you can use egg beaters or egg substitute instead of eggs. Ingredients

    2 whole large eggs
    2 large egg whites
    1 cup copped steamed broccoli florets
    1/4 cup shredded sharp cheddar cheese

Directions

makes 1 small frittata that serves 2

- Seperate the whites of 2 eggs and add to 2 whole eggs
- Add 1tsp water and all of the broccoli
- Salt and Pepper to taste
- Beat the egg mixture until well blended
- Heat a saute pan over medium heat and spray with cooking spray
- Add egg mixture to the pan
- Top with 1/4 cup shredded sharp cheddar cheese
- Cook until eggs are set everywhere but the top
- Place pan under broiler until fluffy and cheese is golden
