Cheesy Baked Lentils, Rice and Turkey Casserole



Introduction

I got this from MetroFood. I haven't tried this yet but will be making with leftover turkey after Thanksgiving. This is a high fiber low calorie dish that looks really good. Ingredients

    1 tsp extra-virgin olive oil
    8 oz turkey cubed
    1 small yellow onion, chopped
    2 cups of chopped brocolli (can subs. with spinach)
    1 19 oz can of lentil soup
    3/4 cup parboiled brown rice
    1/ 2 tsp dried thyme
    1/2 tsp salt
    1/4 tsp ground black pepper (or to taste)
    1/4 cup water
    1/2 cup grated reduced fat swiss cheese
    1/2 cup sharp or old cheddar

Directions

Preheat oven to 400 F. Coat a 2 liter/quart baking dish with cooking spray.

Over medium heat, use olive oil to cook onion and turkey (if not already cooked) - about 5 minutes. Add broccoli and saute about a minute. Transfer mixture to baking dish.

Add soup, rice, thyme, salt, pepper and water. Stir to combine.

Cover baking dish tightly with foil and bake 40 minutes, or until rice has absorbed the liquids.

Uncover and sprinkle both cheeses on top. Bake another 5 minutes or until cheese is melted.

Serves 6.
