Spicy Chicken soup

Introduction

You can make this as spicy as you want just by messing with the ingredients.Also, I put in 12 servings, but we usually stretch it out to more than that. You can make this as spicy as you want just by messing with the ingredients.Also, I put in 12 servings, but we usually stretch it out to more than that.
Number of Servings: 12

Ingredients

    2 lbs. chicken breast cubed
    2 tsp canola oil
    1/2 cup water
    2 low sodium taco seasoning packets
    32 oz of Spicy V8
    16 oz chunky salsa
    1 can of black or pinto beans
    10 oz of frozen corn

Directions

Cook the chicken in the oil till white, add water and taco seasoning packets. Simmer until chicken is coated in seasoning. Put in a slow cooker and add the rest of the ingredients. Cook on low for 3-4 hours. You can use regular V8 and mild salsa if you want a tamer flavor, or use the spicy V8 and hotter salsa for more heat. Sometimes we add jalapenos as well.
