Lentil Rice Casserole

Introduction

A great vegetarian meal that my kids even enjoy! A great vegetarian meal that my kids even enjoy!
Number of Servings: 6

Ingredients

    1/2 cup uncooked brown rice
    3/4 cup uncooked lentils
    one small onion, chopped
    3 cups low sodium chicken broth
    1/2 TBS basil
    1/2 tsp. garlic powder
    1/2 tsp. oregano
    1/4 tsp. thyme
    1/2 cup shredded cheddar cheese

Directions

Mix all ingredients except cheese together in casserole dish with a lid. Bake 70 minutes at 300 degrees. Remove, top with cheese and put back in the oven for about 15-20 minutes more.
