Crock Creamy Sweet Potato SoupSubmitted by: IAMSUCCEEDING
2T Coconut Oil
1 med Onion, chopped
6 med Sweet potato, peeled and sliced
1 medium Apple, peeled and sliced
1T Pumpkin Pie spice
Boullion of choice to make 8 cups
8 oz light cream cheese
Place water and sliced sweet potatoes in the crock while onions are cooking. Add apple, pumpkin, spice and bouillon.
Cook on high for 6 hours.
Add cream cheese and mix. Allow to cook on low for 1 more hour. Whisk to mix cream cheese into soup.
*Add a dollop of sour cream if you would like(not in NI)
