Hearty Veggie Chili

Introduction

This is the South Beach chock full of veggies chili with more veggies and beans. Experiment and add veggies as you like. This makes a satisfying meatless meal. Number of Servings: 4

Ingredients

    1 tbsp olive oil
    1.5 cups diced bell pepper, any color
    1 cup chopped onion
    2.5 cups chopped mushrooms (yield from 8oz pkg with no stems)
    0.5 cups chopped celery
    2 cups diced zucchini
    3 cloves garlic, minced
    1 tbsp chili powder
    1 tbsp dried oregano
    1 tsp dried cumin
    0.25 tsp salt
    2 cups pinto beans (made from dried beans, see my "plain old pinto beans" recipe) or 1 can pinto beans, with juice.
    1 can chickpeas, with juice
    1 can no salt added diced tomatoes, with juice

Directions

Heat oil in large pot over med. heat. Add pepper, mushroom. onion, celery, garlic, and zucchini. Cook and stir until veggies begin to soften, about 7 minutes. Add chili powder, oregano, salt, and cumin. Cook, stirring occasionally, 5 minutes. Add beans and tomatoes, with their juices. Bring to a simmer and cook, stirring occasionally until fragrant and thickened, 25-30 minutes. Makes about 4 servings (2 cups each).
